Six tastings, and the interesting one is the oldest. Indigenous Australian cuisine is on the list, which is rarer on a food tour than it should be: the ingredients this continent was eating for tens of thousands of years before anybody arrived, and which most Australian restaurants have only started using recently. The bush croquettas come out of the same tradition. Alongside them: an expert-led coffee tasting, because Melbourne, a curated local wine tasting, handcrafted cheeses, artisanal chocolates, savoury Vegemite bites for anyone who has heard of it and never had it done properly, and the operator's Secret Dish, which they will not name in advance. The route is a proper walk through the city. The Yarra riverbank, which is where the first European settlement here stood. Federation Square, and what Australian Federation actually was. Flinders Street Station and St Paul's Cathedral. Degraves Street and the maze of laneways, arcades and street art around it. Chinatown, the oldest in the Western world, and its gold rush origins.
