Lima Food Tours and Cooking Classes

Thirty-one experiences from 18 to 220 euros. And a piece of news your tour operator may not have updated: the market most of these itineraries name has been closed.

Lima's food scene is concentrated into about four districts and one market, and there is a problem with the market. The Mercado Nº 1 de Surquillo, opened in 1939 and named in a great many food tour itineraries, has been closed: shut on safety grounds, partly derelict, with its roof having given way in places, and the subject of a legal fight between two municipalities over who owns it.

Ask your operator which market you are actually visiting. Most now use the Nº 2, a few streets away, which is a working market and a perfectly good one.

The markets, and which one you will see

Surquillo Nº 2, on Jr. Leonardo Barbieri, is where the tours go now. It is smaller and less photogenic than its closed neighbour and it is a real market: fish in the morning, the yellow chillies, the potato stalls, the fruit sellers who will cut things open for you.

Mercado Central, in Barrios Altos, is the historic one. Its origins go back to a decree of 1846 and a market opened in 1852; the building burned down on 28 February 1964 and the present one opened on 8 July 1967, with around 950 stalls. It sits next to Barrio Chino, Lima's Chinatown, which formed on Calle Capón from the 1850s and is the reason chifa exists.

Chorrillos fishing market appears in a couple of itineraries and is the early morning option: boats landing, auctions, and the fish that will be ceviche by lunchtime.

We are not publishing opening hours for any of them, because no source we trust publishes them and the ones circulating contradict each other. Go in the morning, and if a market is the reason you booked, let the guide handle the timing.

The pisco sour is taught in half these classes

Eight of the seventeen cooking classes teach it, and it is a better lesson than it sounds because the drink is a technical exercise: pisco, lime, sugar syrup, egg white, and bitters on top. What is being taught is emulsification, the dry shake and then the wet one, and how much lime is too much.

Pisco itself is a grape spirit distilled to proof without water added, which is why it tastes of the grape rather than of alcohol. Peru and Chile both claim the name and both make it, and in Lima you should not expect neutrality on the subject.

Practical note for a class at the start of a trip: this is one of the classes where you drink what you make, and a couple of pisco sours at the end of a four hour morning is a substantial lunch.

Safety, quoted rather than paraphrased

Official guidance on Lima is specific in a way it usually is not, and it names the districts these tours use, so we are going to quote it rather than soften it.

British government advice states that attacks can take place in tourist areas of Lima such as Miraflores and Barranco, and describes theft and robbery as a significant problem. It also warns about express kidnapping, in which victims are taken to cash machines, generally at night, and about unlicensed taxi drivers at the airport.

The consistent, actionable part is the taxi advice: book by app or by telephone, and do not hail a car on the street. That single habit removes most of the risk that visitors actually encounter.

None of this is a reason to avoid Lima, which is a large capital with the ordinary problems of one. It is a reason to arrive with the taxi question already solved, and to be more careful with a phone at night than you would be in Porto.

The 220 euro class, and the 18 euro one

At the top, a ceviche class at 220 EUR, three and a bit times the median of 66, with 17 reviews. We cannot tell you it is not worth it; we can tell you it is a very small sample at a very high price in a category where the 52 EUR class has 1,507 reviews and a 5.0 rating.

At the bottom, 18 EUR buys a mini chocolate workshop, and 30 buys a longer bean-to-bar one. Both are at a chocolate museum in Miraflores, both are genuinely enjoyable, and neither is a Peruvian cooking class. They are filed here because they are hands-on food experiences, and they are the two cheapest things in the country's catalogue by a wide margin.

The value on this page sits between 44 and 66 EUR, where the market walks and the well reviewed classes both live, and where the two most reviewed products in Peru are found.

The fruit tasting is not filler

Several listings advertise a fruit tasting, and one promises 35 varieties. In most cities that would be padding. In Lima it is one of the more memorable hours available, because the Peruvian coast and the Amazon between them produce fruit that does not travel and that you will not have met.

Lúcuma, dry and maple-flavoured, which Peruvians put in ice cream rather than eating fresh. Chirimoya, the custard apple. Granadilla, a passion fruit relative with a shell you crack like an egg. Aguaymanto, the physalis. Pacay, a metre-long pod containing sweet white pulp around the seeds, sometimes called ice cream bean.

It is also the part of a market tour where the vendors do the teaching, which is worth more than any guide's summary.

Questions about food tours in Lima

Which Surquillo market will I visit?

Ask. The Mercado Nº 1, which appears in many itineraries, has been closed on safety grounds and is the subject of an ownership dispute. Tours now use the Nº 2 on Jr. Leonardo Barbieri, which is a working market a few streets away. If an operator is still advertising the Nº 1, their itinerary has not been updated.

How do I get around safely?

By app or by pre-booked taxi, never by hailing one on the street, and that includes at the airport. British government guidance specifically warns about unlicensed drivers there and about express kidnapping at night. It is the single most useful habit to adopt on arrival.

Cooking class or market tour?

Five products are both, starting at the market and finishing in a kitchen, and those are the best use of a morning. Otherwise: seventeen classes at a median of 66 EUR against fourteen tours at 61. Peru is a country where the cooking is worth learning, so if you only do one thing, make it a class that includes the market.

Is the 220 euro class worth it?

We cannot say. It is 3.3 times the median with 17 reviews behind it. The 52 EUR class on the same page has 1,507 reviews and a 5.0 rating. In a category this well reviewed, that gap in evidence matters more than the difference in price.

Can I drink the tap water?

Bottled is the standard recommendation for visitors, and the local position is genuinely disputed between the health ministry and the water utility. Be careful with ice outside established restaurants and with raw salads. Hepatitis A vaccination is recommended for travellers to Peru.

When is the best time to come?

December to April, when Lima is sunny and February reaches 28 degrees. From June to October the coastal cloud, the garúa, sits over the city all day and August averages 19 degrees and grey. It almost never actually rains, so this is about light rather than weather.

Do the tours include ceviche?

Almost all of them, and it will be at lunchtime, which is when Peruvians eat it. Eight of the seventeen classes teach the pisco sour alongside it. If ceviche is your reason for coming, book a morning class rather than an evening tour: the fish is landed in the morning and the good places sell out by mid afternoon.
