The private version, and the chef is Hector Aguilar Valle himself, formerly the creative chef at Maido. It starts at a local market with him, which is the part worth paying for: watching somebody who buys for a restaurant at that level choose fish, and being able to ask why that one. Then his kitchen, which is outdoors, in a garden. Five hours, private, so the pace and the questions are yours. You cook a full menu, and here is a discrepancy worth knowing before you book: the operator's own page says three courses in the description and five in the inclusions. Ask when you book. Either way there is a pisco sour class and a seasonal fruit platter at the end, and an e-recipe book to take away. Transport within the operator's pick-up area is included, which is unusual at this price. Up to fifteen people, in English or Spanish. Requests can be catered for if you give notice. Wheelchair accessible, prams fine, infant seats available. Arrive fifteen minutes before the start.
