Three menus, and you choose: beef, chicken or fish, a starter and a main course each. If you want the starter from one and the main from another, you can, provided you ask first. The day begins at Surquillo Market Number 2, which is a working market rather than a showcase one, and where the guide and the chef walk you through the vegetables, the exotic fruit and the groceries that Peru grows and most countries do not. Then you buy what the class needs. The kitchen is a studio in Miraflores, on the ninth floor, and the format is hands on. The operator is explicit that there are no demonstrations: you do the cooking, with the chef and his team beside you. All three menus can be adapted for vegetarian, vegan or gluten-free diets if you tell them in advance. The last thing is worth stating plainly. The company's profits go to Reciprocity, its sister non-profit, which runs social projects for communities living below the poverty line in Peru. That is unusual enough in this trade to be a reason to pick this class over an identical one. Four hours. Up to fourteen people, in English or Spanish, with the chef, the guide, an air-conditioned vehicle and the meal. No pets on shared classes; ask for a private quote if you have one.

  2. Mercado N 2 de Surquillo

    Your guide and driver collect you and the day starts at Surquillo Market Number 2, a busy local market. You go through the vegetables, the exotic fruit and the groceries Peru produces, and the guide and chef introduce the fresh ingredients the dishes will need. It is a real market, not a demonstration one.

  3. Once we purchase all the products in the local market

    With everything bought, we head to the kitchen studio in Miraflores. You take an active part in preparing each dish the group has chosen, with the chef and his team guiding you step by step. The atmosphere is relaxed and there are no demonstrations: it is hands-on throughout.
