Four Courses Eaten as They Come, on the Seventh Floor

One decision separates this from every other four-course class in Lima: the pacing. Each dish is eaten the moment it is finished, rather than kept warm for a meal at the end. That is better in two ways. The food is at its best, which for a ceviche or anything fried is the whole point. And the class has a rhythm to it: cook, sit, eat, cook again, rather than three hours of work followed by a rush. You do the chopping, the stirring, the frying and the plating. The teaching covers Peruvian ingredients, what they are and what they do, and, usefully, which ones you can substitute when you get home and cannot find aji amarillo. The venue is SkyKitchen, an apartment on the seventh floor in Miraflores, which is a private kitchen rather than a school. Just over three hours. Two people minimum, fourteen maximum, in English, Spanish or German, with all the ingredients, a pisco sour, water throughout and a homemade fruit drink with the meal. Vegetarian on request, and tell them about allergies when you book. Hotel pick-up is not included, extra drinks are for sale, and note that this operator's bookings are final: there are no refunds for cancellation.
