Most cooking classes give you a menu. This one gives you a catalogue: thirty-eight Vietnamese dishes, and you say which ones you want to learn. That is the whole design. Three hours, personalised, with chefs who have been cooking Vietnamese food for more than twenty years and who teach technique rather than steps: the knife work, the balance, the artistry that makes the difference between a dish that is correct and one that is good. The shape of the day is pick-up, the local market, the table, and then hands on for every stage rather than watching the demonstration and stirring at the end. Up to fifteen people. Both lunch and dinner sittings run, and the meal is included. Private transport is not. The class is taught in English, Korean, French and Dutch, which is unusual here and worth knowing if English is not the language you cook in. Wheelchair accessible throughout, transport included, service animals welcome, and infant seats available.
