River Activities and a Cooking Class in the Hoi An Countryside

Four hours in the Hoi An countryside with a local family, and the shape of the day is the one this area has settled on, for good reason. It starts at a local market, which is where you see how the town actually shops before you cook with what it sells: the fish still moving, the herbs sold by the armful, the prices argued over. Then the water. A bamboo basket boat, the round woven kind that is paddled rather than rowed, through the coconut palm forest, which is what people come out here for. Then the class. You cook alongside your hosts instead of watching a demonstration, and afterwards everyone sits down to the meal together, family style. Up to fifteen people, in English, with an air-conditioned vehicle. Infants sit on a lap.
