The Yarra Valley in a Mercedes, Six Seats Filled
Six seats, which the operator claims is the smallest group tour running in the Yarra Valley, in a Mercedes eight-seater with room to spare. Seven and a half hours, and the shape is the same as their other tour but with more of it: family-owned wineries both large and boutique, and the region's full range, from chardonnay and pinot noir to cabernet sauvignon, shiraz and sparkling. Chandon first, for a guided tasting of five sparkling foundation wines in the dedicated room rather than at a crowded bar, with time for the terrace and the homestead afterwards. Lunch at Soumah's Ai Fiori Trattoria, or at Tokar Estate: a two-course northern Italian meal with a glass of the wine you liked best in the tasting. There is a wine tasting at whichever lunch venue you get. De Bortoli closes it, with a cheese and wine pairing in the VIP Trophy Room and Noble One, or St Huberts if De Bortoli has a wedding on. And the kangaroos, on the way back, at the Heritage Golf and Country Club, where a mob lives on the course. Six people at most, in English, with an air-conditioned vehicle, bottled water, alcohol, the guide and lunch. Occasionally you may travel with a group of eight, and they will tell you if so. Contact them twenty-four hours before departure to confirm the pick-up time. Pick-ups run from Yarra Glen, Yering or Melbourne.

Domaine Chandon
The guided sparkling tasting at Chandon. Tasting sparkling wine in the place it is made is a particular pleasure, and in the Yarra Valley the cool mornings and the slow autumn ripening are what give it its nerve. This tasting is built around that, and around you: a small group, no hurry, and someone taking you through each glass. Not a quick pour at a busy bar. You settle in for a considered flight of five sparkling foundation wines in the dedicated tasting room, and hear how the brand made its way to Australia. There is time for the shop, the terrace and the Homestead before we move on to the next tasting and lunch at Soumah or Tokar Estate.
Soumah
Lunch is the best part of the day, at Ai Fiori Trattoria, Soumah's restaurant, where the food is northern Italian. A generous shared antipasti board to begin, then the main course you choose. The glass that comes with it is the wine you singled out in the earlier tasting, which ties the day together. The menu: shared antipasti of cured meats, pickled and roasted vegetables and crostini, then one of four mains. Scallopini di maiale: pork scallopini, lemon and caper, white wine, crisp prosciutto, fennel slaw. Pesce: grilled barramundi fillet, steamed green beans, borlotti beans, salsa verde. Trottole: twelve-hour beef rib ragu with fire-roasted capsicum, onion, garlic, cabernet and balsamic, trottole pasta and parmesan. Risotto: roast carrot and parsnip, silverbeet, shaved parmesan, parsley chip.
De Bortoli Winery
A premium cheese and wine pairing at De Bortoli Estate, in the VIP or Trophy Room, which is small and private rather than the public tasting bar. The hosts match a selection of cheeses to De Bortoli's best wines, Noble One among them, which is one of Australia's finest and most awarded dessert wines. Unhurried but not casual, and the right way to finish in the Yarra Valley. If De Bortoli has a private event on, such as a wedding, the alternative is St Huberts Estate: a cheese board with their estate wines, in a beautiful vineyard setting.
Heritage Golf & Country Club
On the way back to your hotel we pull into the Heritage Golf and Country Club: two Jack Nicklaus courses, a residential estate and the Yarra Valley Lodge Hotel. What we stop for is the wildlife. A large mob of wild kangaroos lives on the course, and we take our time with the cameras. It is usually the most photographed part of the day.
