Three Denominations of Origin, a Cider and a Liqueur

Eight pintxos and five drinks over three hours in the Old Town, and the drinks are the reason to choose this one over the others. Three of them are wines from three different Spanish Denominations of Origin, which is a comparison rather than a set of glasses: a DO is a legally defined region with its own permitted grapes and ageing rules, and putting three side by side shows how much of a wine is decided by geography before anyone touches it. Then Basque cider, still and sharp and poured from a height, and a traditional local liqueur to finish. Non-alcoholic versions are available for all of it. The eight pintxos run from the classic signature creations that made the city's reputation to contemporary bites built on whatever is in season. There is a mechanic worth knowing: if you come with friends and each of you orders something different, the table can end up tasting as many as eleven. Between the bars the guide covers the historic squares, the centuries-old churches and how the streets are actually used, along with the practical advice for eating on your own afterwards, which in a pintxo town is most of what a visitor needs. You meet at the tourism office beside the town hall; the guide carries a company ID. Wheelchair accessible throughout, running in any weather, guided in English or Spanish. Two adults minimum, with at least three days' notice if the numbers are short. Gluten-free, vegetarian and alcohol-free options need to be flagged in the booking comments. Minimum drinking age eighteen.
