The pitch is a subtraction: three wineries instead of five, with the time each one deserves. Everything else follows from that. Chandon comes first, and it is a guided tasting rather than a queue at a bar: five sparkling foundation wines in the dedicated tasting room, with the story of how a French house ended up in the Yarra Valley, plus time for the terrace, the homestead and the shop. Cool mornings and slow autumns here are what give these wines their edge, and tasting them where they are made is the point. Lunch is at Ai Fiori Trattoria at Soumah, and it is northern Italian: a shared antipasti board of cured meats and pickled and roasted vegetables with crostini, then a choice of four mains. Pork scallopini with lemon, caper and crisp prosciutto; grilled barramundi with beans and salsa verde; twelve-hour beef rib ragu with trottole; or a roast carrot and parsnip risotto. The glass of wine that comes with it is the one you liked best in the tasting beforehand. De Bortoli closes the day, with a cheese and wine pairing in the VIP Trophy Room, and Noble One, one of the most awarded dessert wines Australia produces. If De Bortoli is closed for a wedding, the alternative is a cheese board and wine flight at St Huberts. And the kangaroos. On the way through, the bus pulls into the Heritage Golf and Country Club, where a large mob lives on the Jack Nicklaus courses. The operator puts the odds at ninety-nine per cent, and it is usually the most photographed thing of the day. Seven hours. Six people at most, four minimum, in English, with hotel pick-up and drop-off in the city, an air-conditioned minivan and a driver-guide who has been doing this for more than twenty years. Over-18s. City pick-ups only, not suburbs. Tell them about dietary requirements at booking. They also send you dinner recommendations for the evening, which is a small thing and a good one.

  1. Domaine Chandon

    A guided sparkling tasting at Chandon. There is a particular pleasure in tasting sparkling wine where it is made, and in the Yarra Valley the cool mornings and slow-ripening autumns are what give these wines their nerve. The tasting is built around that sense of place, and around you: a small group, an unhurried pace, and someone taking you through every glass. This is not a quick pour at a crowded bar. You settle in and work through a considered flight of five sparkling foundation wines in the dedicated tasting room, and hear about the brand and how it came to Australia. There is time for the gift shop, the terrace and a look at the Homestead before we head on to the wine tasting and lunch.

  2. Soumah

    Lunch is the high point, at Soumah's restaurant Ai Fiori Trattoria, where the cooking is northern Italian. It starts with a generous shared antipasti board of seasonal things, then a main course of your choice. The glass of wine with it is the one you picked out as the standout in the earlier tasting, which closes the circle neatly. The menu: shared antipasti boards with cured meats, pickled and roasted vegetables and crostini, then a choice of four mains. Scallopini di maiale, pork scallopini with lemon and caper, white wine, crispy prosciutto and fennel slaw. Pesce, grilled fillet of barramundi with steamed green beans, borlotti beans and salsa verde. Trottole, twelve-hour slow-cooked beef rib ragu with fire-roasted capsicum, onion, garlic, cabernet and balsamic, with trottole pasta and parmesan. Risotto of roast carrot and parsnip with silverbeet, shaved parmesan and a parsley chip garnish.

  3. De Bortoli Winery

    A premium cheese and wine pairing at De Bortoli Estate, in the VIP or Trophy Room, which is a smaller and better room than the public one. Knowledgeable hosts take you through a selection of cheeses matched to De Bortoli's standout wines, including Noble One, one of the finest and most decorated dessert wines Australia makes. Relaxed but not casual, and the right way to end a day in the Yarra Valley. If De Bortoli is closed for a private event such as a wedding, the alternative is St Huberts Estate, with a cheese board and their estate wines in a beautiful vineyard setting.

  4. Heritage Golf & Country Club

    On the way through we drive into the Heritage Golf and Country Club, which has two Jack Nicklaus-designed eighteen-hole courses, a residential estate and the Yarra Valley Lodge Hotel. The reason we slow down is the residents: a large mob of wild kangaroos that lives on the course. We take our time, cameras out, for what is usually the most photographed moment of the day.
