A Kitchen Reserved for Your Group, and a Gelato Demo

Three hours in a cooking school in Trastevere with a modern kitchen held for your group alone, meeting in the square in front of the San Giovanni della Malva church. It opens the Italian way rather than with an apron: an aperitivo of cured meats and cheese with a glass of prosecco, which is there to let a group of strangers become a group before anyone touches flour. Then the work. Fettuccine and ravioli, both by hand, with two sauces built from what the chef bought that week, one red and one white. Pasta has to dry before it is cooked, and the class uses that gap for a gelato-making demonstration rather than leaving you standing around, which is a small piece of scheduling that tells you the school has run this many times. You sit down to eat both pastas with plenty of wine, and the homemade gelato closes it. If you would rather make pizza, select that option when booking: same format, your own pizza from scratch, unlimited wine and beer, and a Nutella dessert at the end. Up to fourteen guests, in English. Arrive fifteen minutes early; the guide carries a red bag. Not suitable for guests using wheelchairs or strollers, or with mobility impairments. Every dietary need except coeliac disease can be adapted for, but they need to know before the day so the shopping can be done.
