It starts at a market, where the ingredients get chosen and named. Vietnamese cooking runs on herbs and produce with no straightforward equivalent elsewhere, and the market is where that becomes obvious rather than abstract. Then the kitchen, on the third floor of a building on Hang Buom, next door to the street Hanoi drinks on. Three and a half hours, hands on, and the food culture explained alongside the technique.
