Eight Recipes and the Margaritas Keep Coming, Roma Sur

Eight recipes is a lot for one class, and it works because the recipes are chosen to build on each other: the appetizers, the main dishes and a dessert, with the same handful of techniques running through all of them. The margaritas are bottomless from the start, which changes the character of the afternoon. This is a class that turns into a dinner party. The host is bilingual and local, and the stories that come with each dish are the operator's actual selling point: where a recipe comes from, what it means, why it is made that way here and differently three hundred kilometres north. Everything is provided, including the apron, and a digital recipe booklet arrives afterwards so you can do it again. Check the option before booking, because the format changes with it. The shared class runs three hours with no more than six people; the private one runs four and needs at least two of you; and there is a version that adds an hour of market tour on top of the class. All of them in English or Spanish, in Roma Sur. The full meal is included, and the operator's stated aim is that you leave satisfied without being uncomfortably full, which most eight-course anythings do not manage. Allergies and intolerances can be accommodated with notice, and virgin versions of the drinks are available. Transfers are not included; the operator sends the meeting point and start time by WhatsApp, SMS or email after you book.
