Three Michelin-Listed Stalls in Hanoi and an Egg Coffee
Two and a half hours, four stops, and three of them carry a Michelin mention, which in Hanoi means a plastic-stool kitchen rather than a tablecloth. It opens on pho ga, and specifically the dry version, from a place that has been making it for over thirty years and whose sauce is a local argument in itself. Then glass noodles with deep-fried eel, crisp on top of a broth simmered for hours from eel and bones. Eel is not a dish most visitors would order unprompted, which is exactly why it is here. The third is grilled pork over charcoal with vermicelli, fresh herbs and a dipping sauce that does most of the work. This is the one Michelin picked out, and it is easy to see why once it arrives. It ends on egg coffee, at a café hidden in the middle of the Old Quarter with a view over the lake. There are options that extend it: a transfer to the train street with a drink there, or a ticket to the water puppet theatre. Up to fifteen people, in English.
