The menu is not fixed. The chef and the group decide it at the start, based on what people want to learn and what is in season, which is why no two of these classes are the same. Ten to twelve people, in a real cooking school on Via Romana, which is small enough that nobody spends the session watching from the back. The work starts at the foundations. Fresh dough for stuffed pasta, then the shaping and filling that separate a competent ravioli from one that bursts in the pot. Each shape gets matched to the sauce it belongs with, and there are Italian starters like bruschetta alongside. Everything is organic, seasonal and local, and there is no demonstration: you make all of it yourself. Two and a half hours, then everyone sits down to eat the pasta with wine. Water and the recipes online are included. In English, minimum age fourteen, drinking age eighteen. Smart casual. Not suitable for gluten-free diets, and allergies need flagging in advance. No pets, and the school cannot take anyone with mobility or cognitive difficulties on a shared class, though it will run a private one. One practical note: there is no parking and the centre is a restricted traffic zone, so find a garage before you arrive.
