Maya Kitchen Hanoi: Four Dishes, Egg Coffee and Rice Wine
Four hours, and it starts where the cooking starts: a local market, buying the ingredients rather than finding them laid out on the counter. Then the kitchen in the Old Quarter, and four Vietnamese dishes made by hand. Nem ran, the fried spring rolls. Nom du du, green papaya salad. Pho cuon, the noodle sheet rolled round its filling. And pho tron, the mixed version of the soup, served without broth. Egg coffee comes with it, made the proper way, and there is a tasting of local rice wine. Everything you cook is what you eat, with seasonal fruit for dessert and a drink of your choice. You leave with the recipes. Up to fifteen people, in Vietnamese or English. Pickup is not included, so make your own way to the office.
