Three Cocktails in a Nineteenth-Century Bistro Room

Mexico CityMexico City has a great many tequila and mezcal workshops. This one distinguishes itself on the room. Sorondo 270 is a nineteenth-century bistro in a house in Benito Juarez, and the experience runs in a private room inside it, which is an entirely different proposition from a bar with a counter and some bottles. Two and a half hours. A welcome drink to start, then three cocktails you make yourself with the proper mixology tools, using both spirits. The distinction between them is worth arriving with: tequila is made only from blue agave in a defined region and usually steamed in ovens; mezcal proper can be made from many different agaves and is roasted in earth pits, which is where the smoke comes from. Building cocktails with both, back to back, teaches you the difference faster than any amount of tasting. There is an appetizer to eat while you work. Up to fourteen people, in English or Spanish. Not recommended if you are pregnant. Prams fine, service animals allowed.
