Truffle Hunting at San Miniato with Francesca and Her Dog

San Miniato is the town in Tuscany that white truffles come from, and this tour takes eight people into the woods above it with someone who hunts them for a living. Francesca works with Cioco, a Lagotto Romagnolo, which is the breed bred for this. You follow them, and the dog does what it does: nose down, then digging, then a truffle out of the ground that was invisible thirty seconds earlier. Lunch afterwards is at the family villa: two courses, with tagliolini al tartufo, fresh truffle over pasta, which is the point of the whole day. Then a wine tasting in Chianti before the drive back. Seven hours door to door, in an air-conditioned minivan with an English-speaking guide. Eight people at most. Wear boots you do not mind: the woodland is uneven. Moderate fitness expected, and it is not recommended in pregnancy, with a spinal injury or with cardiovascular problems. Drinking age eighteen.
