Two hours and one dish, which is a better bargain than it sounds: most classes spread four dishes thin, and this one gives you the time to get a single thing right. You choose which. Pho, if you want to understand the broth. Bun cha, if it is the grilling. Banh xeo, if it is the batter. Then you cook it step by step with a local chef beside you. The setting is a garden villa away from the Old Quarter, air-conditioned, quiet, and nothing like a commercial kitchen. A coffee comes with the class, and Hanoi has three worth arguing about: egg, coconut, or the salt version. Pick one. The class is taught by cultural storytellers rather than only by chefs, so the traditions behind the ingredients arrive with the technique. The operator also gives stable, respectful work to older women from small rural towns, and they are the ones running the room. Twelve people at most, in English. Breakfast, lunch or dinner depending on the slot, luggage storage for up to three days, a digital guidebook of where to eat, a certificate on request, and twenty per cent off the operator's other classes. The venue is wheelchair accessible.
