RomeMost cooking classes say wine is included and leave you to find out how much. This one lists it: two glasses of prosecco, two glasses of wine and a shot of limoncello, across three hours. The cooking is pasta and tiramisù in a real Roman kitchen off Via Cesare Balbo, with a local chef and a small group. You make the dough by hand and take it through to cut pasta, and you learn one of the two sauces that define Roman cooking: carbonara, which is egg, pecorino, guanciale and pepper and no cream whatsoever; or cacio e pepe, which is two ingredients and pasta water and is much harder than it sounds because the cheese will seize if the pan is too hot. The tiramisù is built from scratch, and the chef explains where the recipe came from and why every Italian family disagrees about it. Water and soft drinks are unlimited. Under-18s get soft drinks instead of the alcohol. Up to fifteen guests, in English. Arrive ten minutes early and look for the logo at the small brown door beside the green one; latecomers may not be able to join. The meeting point occasionally moves to a second venue five minutes away, with notice. The menu means coeliac, gluten-intolerant, vegan and lactose-intolerant diets cannot be accommodated, and infants would have to sit on a lap with no workspace.
