Athens Home Cooking Class: Pita Gyros Made from Scratch

No chef's hat, no formality. You take a beer or a glass of wine out of the fridge and start cooking, and the whole thing runs like being in somebody's kitchen because that is roughly what it is. The dish is pita gyros, made from the beginning rather than assembled, on family recipes the hosts say have never been written down anywhere. The pita is the grandmother's, soft and warm and worth the trouble of learning: once you can make it, the ready-made version stops being interesting. Alongside it you make tzatziki and a spicy feta spread with local hot peppers, and finish with a Greek dessert simple enough to repeat at home. Three hours, and what you cook becomes lunch or dinner depending on the slot you book. Drinks are included, alcohol among them. The instructor is local and teaches Greek home cooking rather than restaurant technique. Guided in English, with bookings taking up to fifteen people. Finding the entrance takes a moment: it is down a passageway on Panepistimiou, between two shops.
