Marrakech

Two skills, and the second one is the one you will use for the rest of the trip. The first is the tajine: made from scratch with a Moroccan chef, in a restored riad, with a local family in the house, plus a salad, a dessert and mint tea made properly. You get the recipe sheet. The second is the souk. Shopping for the ingredients is treated as a lesson in itself, and it covers the haggling, which in Marrakech is not optional and is not rudeness, along with enough Arabic food vocabulary to name what you are pointing at. Both make the rest of a Marrakech holiday go better. The spices get explained, which in Moroccan cooking is most of the argument. Four hours, twelve people at most, in English. The operator is B Corp certified, which is a third-party audit of social and environmental standards rather than a claim about itself, and is rare in this trade. Vegetarian, vegan, gluten-free and other dietary needs can be accommodated. Children under six come free. Hotel pick-up is not included.
