Marrakech

Fifteen or more tastings across nine or ten stops, in the evening, with a maximum of eight people, and the list of what you eat is the most serious in the city. Tangia is the one to come for. It is Marrakech's own dish, meat and preserved lemon and cumin sealed in a clay urn and buried for hours in the embers under a hammam, because the public baths need a fire all day anyway and somebody worked out what else it could do. You do not find it on hotel menus. Around it: trays of sardines crackling with cumin in a wood-fired bakehouse; chicken and livers smoking over charcoal; escargot simmered in ras el hanout; harira with caramel-sweet dates; pastries going into honey; olives; and whatever the carts are doing. The stops are bakeries, pastry shops, grill houses, olive stalls and street carts, and the guide answers the questions you would not know to ask. Why bread is sacred here. Why dates are served in odd numbers. Whether the food stalls in Djemaa el-Fnaa are actually worth eating at. Three and a half to four hours depending on the group, from the Bab Doukkala gate to Jemaa el-Fnaa. Eight people at most, in English, with bottled water. Alcohol and hotel transfers are not included. The operator is unusually straight about who this does not suit, and it is worth reading. Vegetarians lose four or five of the tastings, because there is no substitute for half of this. And it cannot be run for severe allergies or coeliac disease: the risk of traces and cross-contamination in street kitchens is real. Moderate fitness, comfortable shoes, and come hungry.

  1. Marrakesh

    We meet at the Bab Doukkala gate, which is easy to reach by taxi from any hotel in the city. The gate has four arches: two large ones and two smaller pedestrian arches on either side, one of them beside a small kiosk on the pavement. Your guide will be waiting there.

  2. Marrakech

    This is an evening food tour around Marrakech, put together carefully and led by professional food guides. Before anything else, an honest note. The tour follows the local cuisine, and street food vendors cannot accommodate every dietary restriction, so here is the position stated plainly rather than discovered on the night. It does not suit vegetarian diets: you would lose four or five of the tastings. And it does not suit severe allergies or coeliac diets, because of the risk of traces and cross-contamination. If that leaves you standing, read on.

  3. Marrakech

    The medina of Marrakech is about as close to an adventure film as a city gets: a maze of smoky street grills and snake charmers, Berber carpets and calls to prayer, palms and Arabic coffee houses. But it is the food that makes it what it is. Forget soggy sfenj and indifferent tagines. Over four hours you go properly into it. Trays of sardines crackling with cumin in a wood-fired bakehouse, smoky chicken skewers over charcoal, escargot simmered in ras el hanout, bowls of harira with sweet caramel dates, slow-cooked tangia baked in the embers of a hammam, and a good deal more. And it is more than eating. It is the culture behind the food, and the answers to the questions nobody tells you. Why is bread sacred? Why are dates served in odd numbers? Is Djemaa el-Fnaa actually worth eating in?

  4. Marrakesh

    The tour ends in Jemaa el-Fnaa, the main square, which is within reach of most accommodation in the city. Your guide can point you the way on foot or help you find a taxi. Expect three and a half to four hours, depending on how fast the group moves.
