Hands-On Thai Cooking in Sathon with Coconut Milk from Scratch

Two things separate a Thai kitchen from an approximation of one, and this class does both of them by hand. The first is coconut milk. Pressed fresh, it behaves differently in a pan from the tinned kind, and you make it here rather than open it. The second is curry paste, pounded from whole ingredients, which is slow and is the reason most curries cooked at home taste flat. Around that, four dishes, cooked over two hours and eaten one by one as they come off the heat rather than all together at the end. Every class starts in Suan Phlu fresh market, a minute from the door, choosing the vegetables, herbs, spices and rice with the instructor explaining what each is for. Morning, afternoon and evening sessions all include it. Three and a half hours, up to fifteen people, in Thai or English, with bottled water and all the equipment provided and the recipes to take away. The school is inside the market itself, in Sathon near Silom, and it is accessible throughout.
