Tagine, Salads and Spice Tips, Two Minutes off the Square

Three minutes from Jemaa el-Fna and two more down a derb, which is close enough to walk to and far enough that you are somewhere else entirely. The class is in the family's home, and from the photographs the family includes the host's aunt, which tells you the register: cooking, talking, and a meal, rather than a lesson. Tagine, fresh Moroccan salads and a dessert, all hands on, and the storytelling is not decoration. Moroccan food carries a lot of its meaning in why things are done the way they are, and that gets explained as you go. Then everyone eats at the same time, at the right moment, which is the operator's own point about the timing and is a fair one: the food is best the minute it comes off the heat. You leave with the recipes and with spice tips, which are the harder half. No experience needed. Three hours, up to fifteen people, in English, French or Arabic, with bottled water, Moroccan pastry, tea or coffee, air conditioning and Wi-Fi. Service animals allowed.
