The shape of this one is stated in advance, which is unusually helpful: the class starts at the booked time, you cook for about two hours, and the meal comes to the table after that. So a lunch slot means eating in the early afternoon and a dinner slot means eating in the evening, and you can plan the rest of the day round it. The rest is a home kitchen in Marrakech. Tagine, fresh Moroccan salads and a dessert, all hands on, with the traditions behind them explained as you go rather than recited at the start. Twelve people at most, which keeps it a kitchen rather than a classroom. You leave with the recipes and with spice tips, which are the part that actually transfers. No experience needed. Three hours, in English, French or Arabic, with bottled water, Moroccan pastry, tea or coffee, air conditioning and Wi-Fi. Service animals allowed.
